Columba Pasquale

Ingredients:

1 pound all purpose flour

4 eggs

2 extra yolks

2/3 cup butter, plus extra

2/3 cup sugar

1/2 cup almonds

1/2 cup candied orange peel

1/3 cup sugar crystals

1 cup milk

2 tablespoons yeast

salt

Preparation:

Preheat the oven to 325 degrees. Boil the almonds and peel them. Dissolve the yeast in 1/2 cup of warm milk. Combine half a pound of flour with the milk mixture, form a ball of dough, cover with a dish towel and let rise. When its size has doubled, add the eggs, 1 yolk, the leftover flour, sugar, butter, 1 pinch of salt, the orange peel, and the rest of the milk.

Butter an oven rack, place the dough on it, and shape it like a dove. Brush with the remaining egg yolk and dust with the almonds and the pieces of sugar. Once the dough has doubled in size, bake for 1 hour.
